Chocolate Mousse Recipe

There are times where we just want fuss-free desserts which are easy and delicious. This means desserts which require ingredients you can get readily in supermarkets or use whatever is available in your pantry. This is one such recipe - (almost instant) Chocolate Mousse.

So what classifies as fuss-free? For me, it's the 3 NOs - No oven, no heavy duty washing and no time. It's a classic dessert enjoyed by both young and old and great for parties and after-dinner sweets. For a more fancy touch, top the chilled mousse with some berries and whipped cream and people will think that you are a domestic goddess. The key here is in making it seem like you toiled for hours in the kitchen but in reality you only spent 15 minutes (don't worry, I won't tell...)


(serves 4, makes 4 ramekins)

Ingredients 
150g mini marshmallows
250g dark chocolate (min. 70% cocoa content, or mixture of bits and pieces of chocolate you have in your pantry)
50g unsalted butter
60ml hot water
280ml whipping cream
1 tbsp sugar
1 tsp vanilla extract

Method
1. Combine marshmallows, dark chocolate, butter, water in a microwave save bowl. Heat till warm and mix well. You will need to heat in several intervals of 30s, stirring well after each interval. It takes a total of about 2-3 minutes. This will yield a thick, smooth consistency.

2. In another bowl, combine whipping cream and sugar. Whisk till soft peaks form. Add in chocolate mixture in step 1 and mix well. Pour mixture into serving bowls and chill till firm before serving.
