Cornflakes Cranberry Cookies Recipe


One of these days you may be looking to clear out your pantry. If you have some lingering cornflakes and dried fruit, be it cranberry, raisins, etc., mix them together and create delicious cookies using this easy recipe. Once you tried these, you probably won't ever have a chance of these "leftovers" idling around any more...

These cookies are crispy and buttery. The cornflakes are baked to a lovely hue of golden brown, yet, the interior of the cookies remain soft and utterly melt-in-the-mouth. The addition of dried cranberries brings these cookies to a whole new level with a touch of sweet-tartness. If you do not have cranberries on hand, omit them or replace with raisins or any other dried fruit.


(makes about 35 cookies)

Ingredients
125g unsalted butter
30g icing sugar
30g caster sugar
1 egg
150g plain flour
20g corn flour
50g dried cranberries
50g crushed cornflakes (to mix into batter)
100-120g slightly crushed cornflakes for coating
Pinch of salt

Method
1. Cream butter and sugars together till pale and fluffy

2. Add in beaten egg and mix well. Sieve in flours and mix till soft dough forms.

3. Add in cranberries and 50g cornflakes.

4. Chill the fridge for 15-20mins or until dough is firm to handle. Weigh out batter of 10g and shape roughly into a ball. Coat with cornflakes.

5. Bake in preheated oven of 180 degrees for 20-30mins. The cornflakes should be golden brown when ready.
